I am also a person who can do one meal a day, but I think it's much healthier to eat several times a day. Your blood sugar, for one, needs nutrition through the day so it can stay constant. Eating one meal a day would probably cause spikes and lows to the blood sugar. This isn't a good thing for diabetics or people with alot of diabetes in their family.
